Mexican Shakshuka

A vibrant, spicy one-pan dish with a rich tomato, pepper, and chilli sauce, infused with bold Mexican flavours. Perfect for brunch or an easy, flavour-packed dinner.

Ingredients

  • 1 Can of Potts' Enchilada Sauce
  • 100g or more of Chorizo
  • Tomato
  • Half a red pepper
  • Half an onion
  • 4 Eggs
  • Half a tin (or more) of Black beans
  • Water
  • 100g Feta cheese
  • Spring onions

Instructions

  1. Chop chorizo and fry in a pan.
  2. Thinly slice the onion and pepper and add to the pan.
  3. Fry until cooked.
  4. Add half a tin of black beans (or more)
  5. Add the Potts’ Enchilada sauce
  6. Add half a can of water to loosen the sauce
  7. When bubbling, add the eggs and cook in the sauce
  8. Once the eggs are done sprinkle with feta cheese, chopped tomato and spring onions
